Vegan Birthday Cake: How to Make It, Decorate It and Plan the Party Menu

A vegan birthday cake is the dessert most likely to surprise non-vegan guests, because a well-made one is simply a good cake: moist, chocolatey, piled with frosting and sprinkles. This guide covers the three ways to get one onto the table (from scratch, from a box, or bought), how to make vegan buttercream and decorations, and the birthday dinner and party food to go with it.

It also suits kids’ parties with egg or dairy allergies — vegan cakes contain neither — but always check for nuts if an allergic child is coming.

Three ways to a vegan birthday cake

1. From scratch (best flavour)

Our best vegan chocolate cake is a one-bowl recipe and the easiest place to start. It works because it uses the old “wacky cake” chemistry: vinegar reacts with baking soda to lift the batter, so no eggs are needed. It is written for a two-layer 8-inch cake (12 slices) with a dark chocolate and coconut cream ganache — or swap the ganache for the buttercream below.

The swaps that make any cake vegan:

  • Eggs: vinegar plus baking soda (for chocolate and vanilla sponges), ground flaxseed mixed with water (for denser cakes and muffins), aquafaba (for lighter textures) or a commercial egg replacer.
  • Butter: plant butter sticks rather than tubs (tubs have more water), or a neutral oil for a moist crumb.
  • Milk: soy or oat milk. Add 1 teaspoon of vinegar per cup and wait five minutes for a “buttermilk” that makes the crumb more tender.

2. From a box (fastest)

Some supermarket mixes contain no animal ingredients and only ask you to add eggs, butter and milk — swap those for egg replacer, oil and plant milk. Others contain milk powder, so read the ingredient list. A mix sold as vegan-friendly takes out the guesswork.

3. Bought (least work)

Local vegan bakeries and many Whole Foods Market bakeries take custom orders. Order at least a week ahead and confirm that the frosting and decorations are vegan too, not just the sponge.

Vegan buttercream and decorating

Basic vegan buttercream (enough for a two-layer 8-inch cake): beat 1 cup of plant butter sticks (or half butter sticks, half vegetable shortening for a stiffer frosting that holds piping) until fluffy, then add 3½ to 4 cups of powdered sugar, 2 teaspoons of vanilla and 2 to 3 tablespoons of plant milk. For chocolate, replace ½ cup of the sugar with cocoa powder. Some vegans prefer organic powdered sugar, because some conventional cane sugar is filtered with bone char.

Decorating tips:

  • Chill the layers before frosting; a cold cake crumbs less.
  • Apply a thin “crumb coat,” chill 20 minutes, then the final coat.
  • A turntable and an offset spatula make smooth sides much easier.
  • Sprinkles: many contain confectioner’s glaze (shellac), carmine or gelatin. Buy ones labelled vegan.
  • Fresh raspberries, strawberries or chopped dark chocolate are easy, naturally vegan toppings.

Cupcakes instead? The same batter makes about 24 cupcakes; bake at 350°F for 18 to 22 minutes. Cupcakes are easier for kids’ parties: no cutting, no plates.

Timeline

  • Three days before: shop. Check you have candles, a cake board or carrier, and vegan sprinkles.
  • Two days before: make dips and slider patties. Freeze ice cream.
  • The day before: bake the cake layers, cool completely, wrap and keep at room temperature (or freeze for a cleaner frosting job). Assemble the pasta bake. Make the buttercream.
  • On the day, morning: frost and decorate the cake. Keep it cool.
  • Two hours before: bake the pasta bake or warm taco fillings. Set out platters.
  • Cake time: candles, lights off, song.

For a kids’ party, allow 1 to 1½ cupcakes per child. Cut a layer cake into thin wedges or a grid; party slices are smaller than you think.

Feeding meat-eaters and vegetarians at the same table

  • Serve one vegan cake for everyone. A separate “vegan cupcake” for one guest is avoidable; the vegan cake is the cake.
  • Keep the dinner fully vegan and make the extras build-your-own: taco toppings, nacho toppings, sauces. Anyone who wants dairy cheese can add their own.
  • Label nuts. Cashew-based frostings and cheesecakes are common in vegan baking.
