Vegan Tempeh Tacos (Smoky, 25 Minutes)

Tempeh has better taco potential than any other plant protein — it crumbles, it absorbs seasoning, and it develops a satisfying chew when pan-fried. The key is steaming it first: a 10-minute steam removes the natural bitterness and makes the tempeh more porous, so it absorbs the spice blend deeply rather than just coating the surface. These smoky, savory tacos are genuinely satisfying.

Ingredients

Tempeh filling:

  • 1 block (8 oz / 225 g) tempeh
  • 1 tablespoon olive oil
  • ½ medium onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • ½ teaspoon chili powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ½ teaspoon liquid smoke (or 1 extra teaspoon smoked paprika)
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • Freshly ground black pepper

Tacos:

  • 8–10 small corn tortillas or flour tortillas
  • 1 ripe avocado, sliced or mashed
  • ½ cup (80 g) salsa or pico de gallo
  • ¼ red cabbage, thinly shredded
  • Fresh cilantro
  • Lime wedges
  • Hot sauce

Method

  1. Steam the tempeh. Cut the tempeh block into chunks. Set up a steamer basket over boiling water (or use a colander over a pot of boiling water). Steam tempeh pieces for 10 minutes. This removes the bitter compounds that make some people dislike raw tempeh.
  2. Crumble. Remove steamed tempeh and let cool for 2–3 minutes. Crumble it into a bowl with your hands — aim for rough, irregular pieces that mimic the texture of ground meat.
  3. Make the spice mixture. Mix smoked paprika, cumin, chili powder, garlic powder, and onion powder in a small bowl.
  4. Cook the filling. Heat olive oil in a skillet over medium-high heat. Add diced onion; cook 3–4 minutes. Add garlic; cook 1 minute. Add crumbled tempeh. Cook for 3–4 minutes until some pieces are slightly browned.
  5. Season. Add the spice mixture, liquid smoke, soy sauce, and apple cider vinegar. Toss to coat. Cook for 2–3 more minutes until the liquid is absorbed and the tempeh is fragrant and slightly caramelized. Taste and adjust seasoning.
  6. Warm tortillas. Heat tortillas directly over a gas burner flame for 20–30 seconds per side, or in a dry skillet, until warm and slightly charred.
  7. Assemble. Fill each tortilla with tempeh filling, avocado, shredded cabbage, salsa, and cilantro. Serve with lime wedges and hot sauce.

Tips

Steam before cooking. This is the most important tempeh technique. Raw tempeh has a noticeably bitter, earthy taste that disappears almost completely after steaming. Steamed tempeh also crumbles more easily and absorbs marinades and spices better.

High heat for browning. Medium-high heat in the skillet lets the tempeh pieces get slightly caramelized edges, which adds texture and flavor.

Liquid smoke is powerful. Start with ½ teaspoon — it’s very concentrated. Taste and add more if you want a smokier result. Substitute extra smoked paprika if unavailable.

Shredded cabbage > lettuce. Cabbage holds up longer in the taco, adds crunch, and doesn’t wilt under the warm filling.

Variations

BBQ tempeh tacos: Replace the Mexican spice blend with BBQ sauce (3 tablespoons). Cook the tempeh until the sauce caramelizes. Top with coleslaw.

Teriyaki tempeh: Season with teriyaki sauce instead of Mexican spices. Serve in flour tortillas with pickled vegetables and sriracha mayo (vegan mayo + sriracha).

Tempeh taco bowl: Skip the tortillas. Serve tempeh over rice with salsa, avocado, black beans, and corn.
