Vegan Meal Planner: One Main the Whole Table Will Eat
Cooking for vegans, vegetarians and meat-eaters at the same table? Tell the planner who's coming and what's in your kitchen. It plans one fully vegan main everyone will eat, with steps, approximate protein per serving, a flavour check and a shopping list for anything you're missing.

How it works
- Pick a mode. My Kitchen turns 3 to 15 ingredients you already have into three different dinner ideas, each built on a different main ingredient. Guests plans one main for everyone at the table, sized for the headcount.
- Choose from the lists. Ingredients, flavours you like, allergies to avoid, time and skill. We assume salt, pepper and oil; untick any you don't have.
- Get your plan. Each idea comes with quantities, steps, a protein estimate from our food table, a flavour-balance line, at most two missing items (more in Guests mode, where you may be shopping anyway), and a link to our tested recipe when it's a close match. Print it, share the link or email it to yourself.

These came straight from the planner. We tidied the units and wording but did not change the recipes. They are AI-generated ideas, not kitchen-tested recipes, so read each step before you cook.

Hearty Lentil and Mushroom Shepherd's Pie with Herbed Potato Crust
A familiar, cozy Thanksgiving-style comfort dish with a savory filling and golden mashed potato topping that meat eaters and vegans alike will enjoy.
Flavour balance: Soy sauce and salt for savoury depth, tomato paste for richness, vegan butter for fat, and crispy browned mash tops for crunch.
Ingredients
- 2 potatoes, peeled and cut into chunks
- 1 sweet potato, peeled and cut into chunks
- 4 tbsp vegan butter, divided, softened
- ¾ cup soy milk (unsweetened), warmed
- 2 yellow onions, finely diced
- 3 carrots, peeled and diced
- 3 celery stalks, diced
- 4 cloves garlic, minced
- 500 g cremini mushrooms, sliced
- 1½ cups brown/green lentils (dry), rinsed
- 2 tbsp tomato paste
- 4 cups vegetable broth
- 1 cup green peas
- 2 tbsp soy sauce
- 1 tsp dried thyme
- 1 tsp smoked paprika
- 2 tbsp olive oil
- Salt, to taste
- Black pepper, to taste

Steps
- Boil the potatoes and sweet potato in salted water for 15 minutes until very tender.
- Drain, then mash with 2 tbsp vegan butter and the warm soy milk; season and set aside.
- Heat olive oil in a large Dutch oven over medium heat and cook onion, carrot and celery for 8 minutes.
- Add garlic and mushrooms and cook 6 minutes until the mushrooms release and brown their liquid.
- Stir in tomato paste, thyme and smoked paprika for 1 minute, then add lentils, broth and soy sauce.
- Simmer partly covered over low heat for 30 minutes until lentils are soft and the filling is thick.
- Stir in peas, season well, and spoon the filling into a large baking dish.
- Spread the mash on top, dot with remaining vegan butter, and bake at 400°F for 20 minutes until golden.
Build-your-own plate: Set out a build-your-own topping bar with extra gravy, chopped herbs, hot sauce and crispy fried onions so each guest can customise their plate; non-vegan guests can add their own favourite topping.
Host tip: Assemble the filling a day ahead and refrigerate; mash and bake the potato top just before serving, adding 10 minutes to the bake time if chilled.

Spicy Thai Tofu Rice Noodle Stir Fry
Crispy golden tofu tossed with tender noodles and a sweet-spicy lime sauce is a familiar, crowd-pleasing Thai-style dish. Everyone can pile on extra toppings to suit their taste.

Flavour balance: Soy sauce for salt, lime for brightness, chilli flakes for heat, golden fried tofu and crisp vegetables for texture and fat.
Ingredients
- 2 blocks extra-firm tofu, pressed for 10 minutes, cut into 1-inch cubes
- 300 g rice noodles (dry), soaked in hot water 10 minutes until pliable, drained
- 3 tbsp soy sauce, divided
- 2 limes, juiced, zest reserved
- 1 tsp red pepper flakes, for heat
- 3 cloves garlic, minced
- 2 carrots, peeled into thin ribbons
- 1 red bell pepper, thinly sliced
- 4 scallions (green onions), sliced, whites and greens separated
- 3 tbsp neutral oil (canola/vegetable), divided
- Salt, to taste
- Black pepper, to taste

Steps
- Pat the tofu dry and toss with 1 tablespoon soy sauce and 1 tablespoon oil.
- Heat a large wok or skillet over medium-high and fry tofu cubes 8 to 10 minutes until golden on all sides. Set aside.
- Whisk remaining soy sauce, lime juice, red pepper flakes and garlic into a sauce.
- Stir-fry carrot and bell pepper with a splash of oil for 3 minutes until crisp-tender.
- Add drained noodles and sauce, tossing 2 minutes until coated and heated through.
- Return tofu, scallion whites and most greens; toss gently to combine.
- Season with a pinch of salt and pepper, then top with remaining scallion greens and lime zest.
- Serve immediately on a platter so guests can help themselves.

Host tip: Pre-press and cube the tofu and mix the sauce up to a day ahead; soak and drain the noodles just before cooking for the best texture.

Smoky Sweet Potato and Black Bean Tacos
Warm, smoky sweet potato and seasoned black beans tucked into soft corn tortillas, finished with fresh avocado and bright lime. Everyone can build their own.
Flavour balance: Salt from seasoning and beans, lime for brightness, avocado for richness, roasted sweet potato edges for smoky crunch.
Ingredients
- 1 sweet potato, peeled and cut into small 1 cm cubes
- 1 tbsp olive oil
- 1 tsp smoked paprika
- ½ tsp ground cumin
- Salt, to taste
- Black pepper, to taste
- 1 can black beans, drained and rinsed
- 6 corn tortillas, warmed
- ¼ red onion, finely diced
- ¼ bunch fresh cilantro, chopped
- 1 avocado, sliced
- 1 lime, cut into wedges
Steps
- Preheat the oven to 425°F and line a sheet pan with parchment.
- Toss the sweet potato cubes with olive oil, half the smoked paprika, cumin, salt and pepper.
- Spread on the pan and roast for 20 minutes, turning once, until tender and browned.
- While it roasts, warm the black beans in a small pan with the remaining paprika and a pinch of salt for 5 minutes.
- Warm the corn tortillas in a dry skillet for 30 seconds per side.
- Fill each tortilla with beans, sweet potato, red onion, cilantro and avocado.
- Squeeze lime over the top and serve right away.

- 400 g penne (dry)
- 2 cans cannellini / white beans, drained and rinsed
- 300 g cherry tomatoes, halved
- 4 cloves garlic, thinly sliced
- 200 g spinach, roughly chopped
- 4 tbsp nutritional yeast
- 1 lemon, zested and juiced
- ½ tsp red pepper flakes
- 3 tbsp olive oil
- Salt, to taste

Steps
- Bring a large pot of salted water to a boil and cook the penne until just tender, about 10 minutes.
- Reserve one cup of pasta water, then drain the penne.
- Heat olive oil in a large skillet over medium heat and fry the garlic for one minute until golden.
- Add the tomatoes and red pepper flakes and cook five minutes until the tomatoes blister and soften.
- Stir in the beans, mash some lightly, and add a splash of pasta water to make a creamy sauce.
- Add the spinach and toss until wilted, then stir in the penne, nutritional yeast, lemon zest and juice.
- Loosen with more pasta water as needed, then season with salt and black pepper and serve hot.

How to cook one meal for vegans and meat-eaters
Most hosts try to cook two dinners. You don't need to. The planner follows the same five rules good hosts use:
- Pick a familiar format. Pies, lasagna-style bakes, tacos, curries, stir-fries and big pasta dishes feel like "normal dinner" to everyone.
- Hit every flavour note. Salt, acid (lime, vinegar, tomato), fat, savory depth (soy sauce, miso, mushrooms, tomato paste) and crunch. A dish that has all five rarely gets "something's missing" comments.
- Make it hearty. Beans, lentils, tofu and tempeh give the plate substance. The approximate protein figure helps you check.
- Let people customise. A topping bar (herbs, hot sauce, crispy onions, extra sauce) lets everyone make the plate their own. Guests who eat meat can add their own favourite topping on the side.
- Make ahead. Every Guests plan includes a 3–5 step make-ahead timeline (from "2 days before" to "just before serving") so the stressful part is done before people arrive.

What the planner can and can't do
- Every ingredient comes from a fixed list of plant-based foods. Our server then checks each result for animal products, the allergies you picked, links and health claims, and asks the AI again if anything fails.
- Protein is calculated by our server from USDA-based values, not by the AI. Everything else in the recipe is AI-generated.
- It does not give nutrition, diet or medical advice. If you have a medical condition or a serious allergy, talk to your doctor or a registered dietitian.
- The AI never chooses the products or prices. We picked the products in advance, and prices come from Amazon with the time they were checked.
