Vegan Banana Bread (Moist, One Bowl, 60 Minutes)

Moist, dense, and deeply banana-flavored — this vegan banana bread comes together in one bowl and uses overripe bananas as the primary moisture source and sweetener. The riper the banana, the better the bread: black-spotted, soft bananas that are past eating produce the most intensely flavored loaf. This is one of the most forgiving vegan bakes — hard to ruin, easy to make well.

Ingredients

  • 3 large very ripe bananas (about 1½ cups / 330 g mashed)
  • 1 tablespoon ground flaxseed + 3 tablespoons water (flax egg)
  • ⅓ cup (75 ml) coconut oil, melted, or neutral oil
  • ½ cup (100 g) brown sugar or coconut sugar
  • ¼ cup (60 ml) plant-based milk
  • 1 teaspoon vanilla extract
  • 1½ cups (195 g) all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt

Optional add-ins:

  • ½ cup (85 g) vegan chocolate chips
  • ½ cup (55 g) chopped walnuts or pecans
  • ½ teaspoon nutmeg (adds warmth)

Method

  1. Preheat oven. Set to 350°F (175°C). Grease a 9×5 inch (23×13 cm) loaf pan or line with parchment paper.
  2. Make the flax egg. Mix ground flaxseed with water; let rest 5 minutes until gel-like.
  3. Mash bananas. In a large bowl, mash the bananas with a fork until mostly smooth — a few small lumps are fine. The bananas should be very soft and spotty; if they’re firm and yellow, the bread won’t be sweet or moist enough.
  4. Add wet ingredients. Add flax egg, melted oil, brown sugar, plant-based milk, and vanilla to the mashed banana. Stir to combine.
  5. Add dry ingredients. Add flour, baking soda, baking powder, cinnamon, and salt directly to the bowl. Fold together until just combined — stop when no dry streaks are visible. A few lumps are fine. Do not overmix.
  6. Add mix-ins. Fold in chocolate chips or nuts if using.
  7. Pour and top. Pour batter into the prepared loaf pan. Optionally, place a halved banana cut-side up on top of the batter for presentation.
  8. Bake. Bake for 50–60 minutes. The bread is done when a toothpick inserted in the center comes out clean (a few moist crumbs are fine; wet batter is not).
  9. Cool. Let cool in the pan for 10 minutes, then transfer to a wire rack. Let cool for at least 20 minutes before slicing — the interior is still steamy and fragile when hot, and slicing too early produces a gummy texture.

Tips for Moist Vegan Banana Bread

Very ripe bananas are essential. This is not negotiable. Yellow bananas with no spots produce a bland, dry loaf. Black-spotted, almost-past-eating bananas are what you want. If yours aren’t ripe enough, bake them unpeeled at 300°F (150°C) for 20 minutes until the skin blackens — this concentrates the sugars quickly.

Don’t overmix. As with all quick breads, overmixing develops gluten and makes the bread tough. Fold until just combined.

The toothpick test. Quick breads look done before they are — the center takes longer than the edges. Always check with a toothpick. If it comes out with wet batter, give it 5 more minutes and test again.

Cool before slicing. It’s tempting to slice immediately. Don’t — the texture is gummy when hot. Twenty minutes of cooling makes a significant difference.

Variations

Chocolate banana bread: Add 3 tablespoons of cocoa powder to the dry ingredients. Fold in ½ cup of chocolate chips.

Peanut butter swirl: Dollop ¼ cup of natural peanut butter over the batter before baking. Use a skewer to swirl it into the batter.

Spiced banana bread: Add ½ teaspoon each of cinnamon, nutmeg, and cardamom for a warmly spiced loaf.

Mini loaves or muffins: Divide batter among mini loaf pans or a 12-cup muffin tin. Reduce bake time to 18–22 minutes for muffins, 25–30 minutes for mini loaves.

Storage

Banana bread keeps at room temperature, wrapped in foil or in an airtight container, for 3–4 days. In the fridge, it keeps for up to 1 week. Freeze individual slices (wrap in plastic wrap, then foil) for up to 3 months. Thaw at room temperature or microwave for 30–45 seconds.

FAQ

Can I reduce the sugar? Yes — if the bananas are very ripe, you can reduce sugar to ¼ cup (50 g). Very ripe bananas are naturally sweet. The sugar also contributes moisture, so reducing too much can make the loaf slightly drier.

Why did my banana bread sink in the middle? Underbaking is the most common cause. The middle hasn’t set and collapses as it cools. Always use the toothpick test. Also check that your baking soda isn’t expired.
