Vegan Lentil Soup (Simple, 35 Minutes)
Red lentil soup is the simplest satisfying vegan dinner: one pot, pantry staples, 35 minutes, no soaking. Red lentils dissolve as they cook and naturally thicken the broth into something silky and warming. The lemon juice added at the end is not optional — it lifts the whole soup and makes the spices come alive. Without it, lentil soup can taste flat.
Ingredients
- 1½ cups (300 g) dried red lentils, rinsed
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 garlic cloves, minced
- 1 medium carrot, diced
- 1 celery stalk, diced
- 1½ teaspoons ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon turmeric
- ¼ teaspoon cayenne (optional)
- 1 can (14 oz / 400 g) diced tomatoes
- 6 cups (1.4 liters) vegetable broth
- Juice of 1 large lemon (about 3 tablespoons)
- Salt and black pepper to taste

Method
- Cook aromatics. Heat olive oil in a large pot over medium heat. Add onion, carrot, and celery; cook for 7–8 minutes until softened. Add garlic; cook 2 minutes.
- Toast spices. Add cumin, smoked paprika, turmeric, and cayenne. Stir and cook for 1–2 minutes until fragrant.
- Add lentils and liquid. Add rinsed lentils, diced tomatoes, and vegetable broth. Stir to combine. Bring to a boil, reduce heat, and simmer for 20–25 minutes, stirring occasionally.
- Check lentils. The lentils should be completely soft and starting to dissolve — the soup will be naturally thick. If too thick, add another cup of broth or water.
- Blend (optional). For a fully smooth soup, use an immersion blender to blend all or half the soup. Blending half gives a creamy consistency with some texture remaining.
- Add lemon juice. Remove from heat. Add lemon juice. Taste — if it still tastes flat, add more lemon. The acid transforms the soup.
- Season. Adjust salt, pepper, and cumin to taste.
- Serve. Ladle into bowls. Drizzle with olive oil and top with fresh parsley or cilantro. Serve with crusty bread.
Tips
Lemon juice at the end. This is the most important tip in this recipe. A generous squeeze of lemon added off heat makes the spices brighter and the soup more complex. Add it at the end, not during cooking (acid added during cooking becomes dull).
Red lentils cook fast. Unlike brown or green lentils, red lentils take 20–25 minutes and need no soaking. They dissolve naturally, which is what thickens this soup.
