Vegan Granola Recipe (Crunchy Clusters, 30 Minutes)

Homemade granola is substantially better than store-bought — fresher, cheaper, and you control the sweetness and ingredients. The key to granola with big, crunchy clusters (rather than individual oats) is the press-flat-no-stir technique: press the oat mixture firmly into the pan before baking, and don’t stir it while it bakes. The clusters form while it’s untouched in the oven; stirring breaks them apart.

Ingredients

  • 3 cups (270 g) rolled oats (old-fashioned)
  • 1 cup (about 120 g) mix of nuts and seeds — almonds, pecans, cashews, pumpkin seeds, sunflower seeds
  • ½ cup (120 ml) maple syrup
  • ¼ cup (60 ml) coconut oil, melted, or neutral oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • ½ teaspoon salt

Optional add-ins (stir in after baking and cooling):

  • ½ cup dried cranberries, raisins, or chopped apricots
  • ½ cup vegan dark chocolate chips or cacao nibs
  • ½ cup unsweetened coconut flakes (add in the last 5 minutes of baking — they burn easily)

Method

  1. Preheat oven. Set to 325°F (165°C). Line a large rimmed baking sheet with parchment paper.
  2. Combine dry ingredients. In a large bowl, combine oats, nuts, and seeds. Mix to combine.
  3. Combine wet ingredients. In a small bowl or measuring cup, whisk together maple syrup, melted coconut oil, vanilla, cinnamon, and salt.
  4. Combine. Pour the wet ingredients over the oat mixture. Stir thoroughly until every oat and nut is coated. Every piece needs oil and sweetener or it won’t cluster and crisp.
  5. Press flat. Spread the mixture onto the prepared baking sheet. Use the back of a spatula to press it down firmly and evenly — compact it into an even layer. This is the cluster-forming step. The more firmly you press, the bigger the clusters.
  6. Bake without stirring. Bake for 20–25 minutes without stirring. The granola is ready when it’s golden brown and the edges are slightly darker than the center. It will still feel slightly soft when hot — it crisps as it cools.
  7. Cool completely. Do not touch the granola until it has completely cooled — minimum 30 minutes. Breaking it while warm breaks the clusters. Once cooled, break into chunks along natural fault lines.
  8. Add mix-ins. Once completely cooled, stir in any dried fruit or chocolate chips.
  9. Store. Transfer to an airtight container. Granola keeps at room temperature for up to 3 weeks.

Tips for Crunchy Cluster Granola

Press down hard. The contact between oats (from pressing) is what creates clusters. Don’t be shy — really compact it.

Don’t stir during baking. Even one stir breaks all the clusters forming underneath. Trust the oven and walk away.

325°F, not higher. Higher temperatures burn the nuts and edges before the center is done. Lower and slower produces even browning and crunchier granola.

Cool completely before storing. Warm granola releases steam that softens it in a sealed container. Always let it cool fully on the pan before transferring.

Oil is essential for crunch. Oil-free granola is possible but won’t get as crispy or cluster as well. The oil helps the coating adhere and crisps in the oven.

Variations

Nut-free: Omit nuts and use all seeds (pumpkin, sunflower, sesame). Safe for nut-free households.

Peanut butter granola: Replace ¼ cup of the oil with ¼ cup of natural peanut butter. Produces a richer, nuttier flavor.

Tropical: Use coconut oil + coconut flakes (add in final 5 minutes) + macadamia nuts + dried mango chunks.

Chocolate: Add 2 tablespoons of cocoa powder to the wet ingredients. Stir in chocolate chips after baking.

FAQ

Why is my granola not crunchy? Either not enough oil, not enough sugar (both are needed for crisping), baked at too low a temperature, or stored before fully cooled. Check all four.

How long does homemade granola last? Up to 3 weeks in an airtight container at room temperature. In a sealed jar in a cool pantry, it stays crunchy. Humidity is the enemy — don’t store it near the stove or in humid areas.
