Vegan Apple Crumble (Warm, Buttery, 45 Minutes)

Golden and bubbling out of the oven, a great apple crumble is the simplest dessert in terms of the effort-to-satisfaction ratio. Tender cinnamon-spiced apples under a crispy oat and almond topping — this vegan version uses cold vegan butter to achieve the same sandy, crumbly texture as the original. Ingredients

Apple filling:

  • 6 medium apples (about 2½ lbs / 1.1 kg) — Granny Smith for tartness, Honeycrisp for sweetness, or a mix
  • 2 tablespoons maple syrup or brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 tablespoon cornstarch

Crumble topping:

  • 1 cup (90 g) rolled oats
  • ½ cup (65 g) all-purpose flour
  • ½ cup (55 g) sliced almonds or chopped walnuts
  • ⅓ cup (70 g) brown sugar or coconut sugar
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • ½ cup (115 g) cold vegan butter, cubed

To serve:

  • Vegan vanilla ice cream
  • Whipped coconut cream

Method

  1. Preheat oven. Set to 375°F (190°C).
  2. Prepare apples. Peel, core, and slice apples into ¼-inch slices (not too thin — they shrink as they bake). Toss with maple syrup, lemon juice, cinnamon, nutmeg, and cornstarch. Transfer to a 9×13-inch (23×33 cm) baking dish or a 10-inch (25 cm) cast iron skillet.
  3. Make the crumble. In a large bowl, combine oats, flour, nuts, brown sugar, cinnamon, and salt. Add cold cubed vegan butter. Use your fingertips to work the butter into the dry ingredients — pinch and rub until the mixture resembles coarse, clumpy breadcrumbs with pea-sized pieces of butter visible. The cold butter is what creates the crumbly texture.
  4. Assemble. Spread the crumble mixture evenly over the apples. Press down very gently — not too compact, just enough to distribute.
  5. Bake. Bake for 35–40 minutes until the topping is golden brown and the apple filling is bubbling at the edges.
  6. Rest. Let cool for 10 minutes before serving — the filling is very hot and thickens slightly as it cools.
  7. Serve. Spoon into bowls and serve with vegan vanilla ice cream.

Tips for the Best Vegan Apple Crumble

Use cold butter. Room temperature or melted vegan butter produces a paste rather than a crumble. The butter must be cold for the rubbing-in technique to work.

Mix apple varieties. One tart (Granny Smith) and one sweet apple (Honeycrisp or Fuji) produces a more interesting filling than using a single variety.

Don’t peel if you prefer texture. Apple skin provides texture and nutrients and is perfectly acceptable in a crumble. Peel for a more refined result.

Check for doneness by the edges. The crumble is done when the apple filling is visibly bubbling at the dish edges, not just when the top looks golden.

Variations and Substitutions

Pear and ginger: Substitute pears for the apples, and add 1 tablespoon of freshly grated ginger to the filling.

Rhubarb and strawberry: Replace half the apples with rhubarb (increase sugar in the filling) and add ½ cup of strawberries.

Gluten-free: Use certified GF oats and a GF flour blend in the topping.

Oil-free crumble: Replace vegan butter with coconut oil (solid at room temperature). The texture is slightly different but still crumbly.

What’s the difference between a crumble and a crisp? These terms are used interchangeably in many US recipes. Technically, a crisp includes oats in the topping (which crisps in the oven); a crumble doesn’t.
