Vegan Belgian Waffles

Crisp on the outside, tender inside — vegan Belgian waffles done properly. Yeast-raised batter for the most authentic crisp-tender contrast.

Method

  1. Warm plant milk to body temperature. Stir in yeast, sugar, vinegar. Let stand 5 minutes.
  2. Whisk flour and salt in a large bowl.
  3. Add yeast mixture and melted butter. Whisk to a smooth batter.
  4. Cover and let rise 30-45 minutes until bubbly and aromatic.
  5. Heat your Belgian waffle iron. Brush lightly with oil.
  6. Pour batter (about 1/2 cup per waffle), close, cook 4-5 minutes until deep golden.
  7. Serve immediately with maple syrup, vegan whipped cream, fresh berries.
